This is simply perfect.
Ingredients:
2 tbsp olive oil
1 large yellow onion sliced 1/4th thick
Kosher salt
8 slices of French bread cut thick
Dijon mustard
10 Oz sliced smoked gouda cheese
Fresh arugula
Lets put it together:
Heat oil in large skillet; add onions and cook until caramelized, stirring occasionally (about 20 minutes). Season with salt and pepper and set aside. Wipe skillet out with paper towel.
Brush one side of each bread slice with olive oil. Turn slices over and spread with mustard. Yum. Next, place a layer of cheese on one bread slice for each sandwich, then a scoop of onions, then another layer of cheese on top of the onions. Seriously yum. Top with the other slice of bread, oil side up.
Grill in skillet over med heat until golden. Keep covered while browning to allow cheese to melt. Brown both sides.
Gently open sandwich and stuff lots of fresh arugula in there.
